Some time ago I used an MQTT server and influxdb on the pi to record temperatures sent over the WiFi from various rooms in the house. The sensors were DS18B20. Initially I used Pi 1 or Pi2 in the rooms, then switched to ultra cheap esp8266 D1 mini clones, as a pi zero or zero 2 would have been massive overkill. Each sensor used the same mqtt software. The central pi provided a web interface (and control of other devices).
