If money is not a limiting factor then buy a Pi 5 with 16Gb. It's probably not necessary to have so much RAM, but they are not upgradable, so start with the highest specification.

Alternatively, a Pi 500 might be a better form factor as it's integrated into a keyboard. It has less RAM, but this is probably not an issue.

I wouldn't consider a Pi 4 or Pi 400 here, but only because they're not significantly cheaper. However, they should still do what you want.

Make sure you get the official PSU for the Pi 5.

Hopefully someone with a Pi 5 will try doing all three activities at the same time and offer an opinion about how well it works.
