Just need to decide if I should just use the serial port, or if i should try and get fancy and create a parallel port connection

I wouldn't. Serial is just so much easier, fewer wires, less soldering, and very easy to debug if you need to see what's being sent to the printer.

But, if it's RS232, don't connect directly to the Pico pins or you will likely destroy the Pico.
