As above look at HA, you'll be able to log a lot more and then you probably end up down a rabbit hole of monitoring all the things.You could look at Home Assistant which is for home automation and has plugins for various PV systems. It can run on a Pi.
I like tinkering, so have set up my own custom routines to manage and monitor my system (currently generating a massive 77W. Welcome to Summer Time)
But it may depend on what is available to you.
Other than that, a bit o python or node-red and strong it to a text file or database.
There are some beginner logging project on raspberrypi.org under projects.
