Thanks for the offer but I doubt it would be useful to others in its current form!
The challenging parts of the conversion are: sorting out what is being done now and "translating" it. The second part is easy, even for fairly complex stuff.

That little monitor I bought (https://www.amazon.co.uk/dp/B0BPLRYYH3? ... ct_details) works fine on my current rpi5. I'll wait until that pimoroni nvme hat is shipping (april iirc) then buy one plus a second rpi5. That'll give me a blank slate with which to use sdm. It'll also be an opportunity to do some mdadm nvme tests.
