Without knowing anything I'd recommend the artist being an equal partner in the company that owns the game in exchange for the art. The company would then own both the art and the code. Such arrangements need to be drawn up carefully so they are legal and so everyone understands the understanding.Just don't ask them to do it for experience or exposure. That's insulting and will go down like a lead balloon. And even then you'll probably still need to sort out the rights and who owns their work.I imagine every highschool and college has a number of students with the skills necessary to redo the artwork for an independent video game. Someone might be interested in doing the work in exchange for being made a partner in the business.
Fortunately that's easier than licensing Zelda or surviving a copyright infringement lawsuit.
