Probably get to know the Pi5, then get to know the Pico, then go from there.
Stay away from HomeAssistant while you learn as it will take away knowledge of how it works (in my opinion).
As for the SD cards,
If you have any old 2.5" SSD drives spare, then grab a USB3 adaptor and use that as you main drive, it is a lot faster than the SD cards. If you don't, then not to worry.
Either will work well.
(Aka you have a lot of choice, just get what you need and go from there)
