Everyone else is lighting a match. Question is, if it burns off the circuit connection quickly, then it might not be a reliable experiment demo. So you should at least prove that it works by trying it directly connected.

Those DC-DC breakout boards have a chip with a current limiter, so the wattage you'd get (or can put into the steel wool) is not unlimited. I have similar boards, you can check the chip markings and download the datasheet -- mine are MP1584 and MP2307, IIRC.

The power FETs are all very nice, but they won't be much of a use of you don't apply a high enough gate voltage. That's why Microchip and others sell gate drivers for MOSFETs. So you are limited by the amount of juice the DC-DC board can supply and by a saturated power NFET due to low driving voltage.
