Because that shows how libinput sees the devices, and it is libinput which determines whether squeekboard can use the device. libinput shows the capabilities of devices; /proc/bus etc doesn't. According to the /proc/bus data, the touch device has a mouse handler - there is no indication that it is actually a touchscreen. Which may be the problem - if it is simply generating mouse events and not touch events, it won't trigger the display of squeekboard.
