The 'recommended software's is just software their guides might need, things they have helped support and develop for something or Raspberry Pi Foundation use for education and projects and so ask for it to be there.
It is not just any old software they think would be great e.g. Tux Paint.
You can use the graphical Add/Remove software , though the usual problem as with apt (terminal) is the mess of files that appear in searches as it not just the main program.
