I have two HDMI monitors of the same resolution plugged into a Pi5; running totally up to date Bookworm 64-bit.

Used in 'extended desktop' mode, they work fine.

I suspect you need to switch from "extend desktop" mode to mirror mode. I can't say where you would do so as I've yet to use labwc.

I agree - but I can't find the option!

To me, it would logically be part of the Screen Layout editor (Preferences-->Screen Configuration). There's no other obvious place to look.
