A distressingly common problem when files appear to not get written is the SD card failing.
Can you check that you can with a file and have it appear later as in, if you read the card on a different machine, or at least a reboot. It is possible for the various caching mechanisms to confuse us very, very, thoroughly.
Do you have a different SD card to try with?
