If you are not familiar with Intrinsic Safety (IS) or other ways of protecting potentially explosive atmospheres from electrical sources of ignition, don't touch this project with a bargepole. It requires specialist engineering at a high level of competence. There may also be regulatory issues, which will vary from country to country.One detail that may make this more expensive: fruit ripening with ethylene can be exceptionally explodey. So your sensors, Raspberry Pi and power supply will have to explosion protected.
