I'm using the Geekworm X1001 and a Kingston NV2 SNV2S NVMe disk on two Pi5s with no problems. Have used them both as a data disk (my primary use case), but have also blasted RasPiOS onto the NV2 and booted from it. Have also been able to use gen3 speed on this configuration.

2) No. USA here, bought these both from Amazon and they fit very nicely in the GeekPi metal case with the Official cooler
3) No clue. What's F8?
4) How does a Pi "just think" it's headless?
5) SSH
The Pi is not finicky if you use known good components and properly configure the software. There are plenty of methods for configuring the system so that it works properly from the minute you boot it. You haven't said anything about how you've configured the system relative to questions 4 and 5, so can't suggest why you're having problems that cause you to raise these (4 and 5) questions.
