WiFi is widely available throughout Seoul, @jamesberry. This means using cafe wifi should work well for lighter tasks on your Pi, like browsing the web or checking emails. However, for tasks that require a lot of data, like downloading large files or video calls, a wired internet connection would be ideal. I've stayed in Airbnbs in Seoul with wired internet, so I suggest asking your host in advance if they provide an ethernet port you can use.
The choice between a local sim card and Wifi egg will depend on how long you're planning to stay in Seoul. Personally, I prefer a WiFi egg rentals as compared to local sim. I only have experience using KT sim card, so I cannot compare the connectivity with other providers. But I have generally good experience using KT. Let me know if you have any other questions!
