The Pi camera is an advantage squashed into a small case but in many other arrangements, that thin cable is a risk. Outside of the cable and waterproofing, the next selections are resolution, low light, and quality.
I see heaps of reports where someone installed video for surveillance, someone walks up to the camera, looks at the camera, bashes the camera, and the police say the image quality of the full on nighttime face shot is not good enough to identify the criminal. Image may be NSFW.

I would work back from your requirements, the picture quality requirements to the usage environment, then pick a camera or post your requirements here for advice from those who have cameras.
For example, which Pi current camera has the best night time imaging? (My requirement #1) Can you mount it in a waterproof case while retaining image quality? (As I will mount at least one outdoors facing south where we get the worst weather.)
Oh, and which Pi? For those reading this who have not yet looked at cameras, there are camera connection differences across the Pi range.
