Troubleshooting • Pi has good internet, but not always visible on WLAN to other comp.

I have a student I am teaching remotely, who is building a Freenove Robot Dog kit around a RPi 3B+

We got everything installed, and set up SSH & VNC settings using HDMI, then started trying to work remotely, and it started getting weird.

-At first, SSH worked fine, then totally stopped.
-VNC was set up, but wouldn't connect.
-We tried to Ping the Pi, and that worked fine (at first)
-Then the next class, SSH wouldn't connect at all, even after resetting it in raspi-config
-Next, we added the SSH file to the /boot, and got SSH working again.
-The next time we booted it, SSH says the password is wrong, despite resetting it multiple times, including changing it to a simple [space] " ".
-Now Ping won't find it from other devices.
-We used HDMI to test the RPi wifi, and it comes back >24M down on Fast.com, decent stats on iwconfig, etc.

Any idea what could be going on or how to solve it?
(I wish I was there in person to use my own RPi, just to test the network further, but teaching online has it's little drawbacks.)

Help is much appreciated.
