Well I've done a whole bunch more messing around , mostly with a Argon 5 NVMe , this works fine , all my NVMe sticks work here (an it can boot from them (but it does only have one NVMe slot... so the bug/feature is not an issue.
However I have come back the the Waveshare, with 2 stick I now know are good. They simply fail to appear. looking a dmesg I can't see any attempt to access them, it's simply as if there is no NVMe "subsystem" in existence.
At the above point there are 2 sticks of NVMe installed.
