does any one know know of a way to be able to figure out what pin on the connector does what and where it should be wired on the pi pico?
The usual way would be to find the datasheet for the keypad.
However given it has 62 buttons but only 14 pins, it's highly likely to be a matrix keyboard. A web search will tell you how to read one of those but the trick is going to be working out which pins are rows, which are columns, and which buttons are on which intersections.
