1. get a second phone with a camera
What I need to do in the simplest way possible
2. connect the phone to the charger so you don't have to worry about it running out of power.
3. setup the phone's wifi
4. set it up with your google account
5. set the photos app on the phone to automatically backup your photos to the cloud
6. install an intervalometer app (many free ones) so it takes the pictures in whatever schedule/frequency you want
7. put the phone on a holder/tripod/stand next to your subject as needed
8. click whatever buttons in the intervalometer app so it starts taking pictures
9. optional: share your google photos and anyone with a link to it can see the pictures shortly after they are taken
Old second hand phones are cheap, and even free if you ask the right places/people.
You don't need a phone account to make this work, just use your google account and connect it to your wifi.
No need to email, sync, transfer, download, remote access, program anything, cron jobs, etc, etc, etc.
I've done this. Anything else is over engineering it.
The only reasons this would not work for you is if you pic a phone with a crappy camera, and those are very hard to find these days.
